3-2-1 Ribs
Ribs... one of the staple meats of BBQ! They may seems extremely daunting the first time you pick a rack up, but don't worry they are super easy using the 3-2-1 method. In short, this method is 3 hours unwrapped in the smoker, then 2 hours wrapped and finally 1 hour unwrapped. Once you pick up your rack from the store you're only a few hours away from making your neighbors jealous. Back in the kitchen, you will want to remove the membrane from the back side of the ribs. You can use the handle of a spoon to get under it, when you can get your finger under it pull it completely off. If you are having a hard time gripping it you can use some paper towel to help you out. Apply a liberal coating of Arrowhead North BBQ Sweet Rub or your favorite rib rub to both sides of the rack. While the rub is setting fire up your smoker to 225F. By the time your grill is ready your ribs should be ready to put on the grates. Let them roll in the smoke for the next 3 hours. At this point we need to wrap the ribs. You will need some heavy duty aluminum foil, Sunspun is an excellent one to use. Tear off 2 pieces of foil so that you can double wrap in the event that one layer gets punctured. Place the rack on the foil and lift up the sides so you can put some moisture into the wrapping. We like to use a little bit of apple juice for this. On top of the ribs place a few Tablespoons of butter or Parkay Squeeze Butter and some honey or brown sugar. Wrap the rack tightly, but careful not to puncture the foil. Place the rack back on the smoker for another 2 hours. After the 2 hours your ribs will be super soft and need to firm up slightly. Remove the rack from the foil and place back on the grates for another hour. After roughly 30 minutes cover in some Blues Hog Smokey Mountain BBQ Sauce or whatever you prefer. Remove from the grill and enjoy!
