Smoked Chicken with Alabama White Sauce
Alabama White Sauce was made famous by Big Bob Gibson's in Decatur, AL. The acidity pairs great with BBQ and the mayo acts as a moisture barrier especially with poultry. This is not a real common sauce that a lot of people have tried, but trust me, you have to try it!
Ingredients:
- 8 Chicken Leg Quarters
- Rave BBQ Lickity Lemon Pepper
- Killer Hogs Mississippi White Sauce
Turn your grill of choice on to 300F with your favorite wood and let it warm up as we get the chicken prepared. Pat dry and trim leg quarters, lightly coat both sides with olive oil, and season generously with Rave BBQ Lickity Lemon Pepper seasoning, any peppery rub pairs well with this recipe. Meat Church Holy Cow is another great rub for this. Place the chicken on your grill and grab a drink. If you are using charcoal you will want to set it up if indirect cooking. Cook until the internal temperature of the chicken reaches around 190F. Remove the quarters from the grill and drizzle (or submerse) using Killer Hogs Mississippi White Sauce. This is Malcom's take on Alabama White Sauce, which is amazing. This recipe works well with any type of chicken- whole, wings, drums and breasts.
